Are you looking, chutney for dosa? Here is a Bendekayi chutney or Ladies finger chutney. Bhindi Chutney is a lip smacking chutney recipe goes well with dosa, roti, chapati.

Okra chutney is a simple, quick finger licking recipe. This is a healthy, tasty and a different chutney from our usual dishes. Most importantly this chutney is prepared from Bhindi, a very low- calorie vegetable.

Also this is a good way of adding vegetables to our diet with all nutrients. Furthermore, this is a perfect recipe for lazy afternoons and don’t want to spend much in kitchen. Easy to make and tastes delicious.

This Bhindi ki chutney is used as a side dish with Idli, chapati, roti, dosa or any breakfast recipes. It also goes well with hot rice with a spoonful of coconut oil or ghee or you can definitely use it as a spread for sandwich or as a dip with snack.

While making ladies finger chutney make sure that they are soft & tender. The matured okra will not be good for making chutney. So always use tender bhindi for making any recipes using bhindi as main ingredient.

Even more these okra are loaded with healthy nutrients. They are rich in dietary fiber and vitamins. A good source of folates which is necessary for a women during pre-conception period. Good for diabetes.

Ingredients

  • 2 Okara/Bhindi chopped, use soft, tender okra
  • 1/2 green chilli
  • 1/2 cup grated coconut
  • 1 tbsp fried gram
  • 2 to 3 ginger slices
  • 2 to 3 coriander leaves with stem
  • 1/2 tsp salt
  • 2 tsp coconut oil
  • 1/2 tsp mustard
  • 1/2 tsp cumin
  • 1/2 tsp hing (asafoetida)
  • 3 curry leaves

Instructions

How to make Okra/ Bhindi chutney:

  • Heat a small frying pan over low to medium flame and add coconut oil.
  • Once the oil gets heated, add green chilli and chopped okra. While using okra make sure that, it should be soft and tender.
  • Saute for 2 to 3 mins and turn off the heat. Allow this to cool completely.
  • Now transfer this to a blender.
  • Also add grated coconut, fried gram, ginger slices and coriander leaves along with its stem.
  • Similarly add salt and little water.
  • Grind this to a fine paste and transfer this mixture to a bowl. keep it aside. Mean while we prepare the tempering for chutney.
  • Heat a tempering ladle and add little coconut oil. 
  • Once the oil is enough heated, add mustard, cumin, hing and curry leaves.
  • Saute well until it splutters and turn off the heat.
  • Then transfer this tempering to the prepared okra chutney and give it a good mix.
  • Now the lip smacking okra chutney is ready to serve!
  • Serve this okra chutney as a side dish with chapati, roti, dosa and even good with hot rice also.
