Broccoli almond soup is a simple, yet delicious soup recipe made with few ingredients. This is a creamy, rich as well as healthy & nutritious soup with crunchy almonds. Most importantly, broccoli is an excellent source of vitamin C, vitamin K, Iron, fiber and potassium. Broccoli is rich in protein, but low in calories. This soup is easy to make and tastes amazing.

Ingredients

  • 1 tbsp butter
  • 1 tsp ginger finely chopped
  • 1 tbsp garlic finely chopped
  • ½ cup onion finely chopped
  • ½ cup broccoli florets washed
  • 1 tsp salt
  • ½ cup milk skimmed
  • ½ tsp rosemary
  • ½ tsp sage
  • ½ tsp pepper crushed
  • 10 gram almonds finely sliced

Instructions

  • Firstly, heat a large pan on moderately low flame and add butter
  • As the butter is melted up, add finely chopped ginger & garlic
  • Saute well for 2 mins
  • Next add finely chopped onion and saute again until onions are translucent
  • Further add washed broccoli florets along with the stem
  • Stir once and add little salt
  • Give a good mix and add little water
  • Bring this to a boil for 3 to 4 mins and turn off the heat. Let it be cooled completely.
  • Then transfer the boiled broccoli mixture to a blender and blend it to a fine texture
  • Again heat a pan on low flame and add the blended broccoli mixture & add little water
  • Similarly add skimmed milk & mix well. Now bring this to a boil for 2 to 3 mins
  • Likewise add salt and give a quick mix
  • Additionally add rosemary & sage, mix everything well.
  • Next add finely sliced almonds and boil for one more minute
  • Turn off the heat and finally add crushed pepper & give a good mix
  • Now the creamy, rich broccoli almond soup is ready to serve!
  • Garnish this soup with finely sliced crunchy almonds & roasted broccoli florets
