Ayurveda recognizes garlic as blood purifier. It is a powerful natural antibiotic. Garlic has healing and medicinal properties and comes into the category of Rajasic food. The taste of garlic is pungent and carries heat energetic effect in the GI tract.
Now comes to the garlic recipe, Tambuli or tambli is a type of raita , a healthy recipe of Karnataka. This is a part of everyday meal in malnad, udupi region. Most importantly, it is a curd based cuisine. Usually it is served with hot rice along with rasam or sambar. Further more the word “tambuli” is derived from Kannada word, which means “tampada huli”. This makes the body cool. Hence it is a healthy recipe.
Further this is a simple recipe, easy to make and tastes excellent. Even more this tambuli is a perfect side dish with rice. In this garlic tambuli, I have used garlic cloves, cumin, red chilli along with grated coconut. Firstly, roast garlic cloves, cumin and red chilli with ghee slightly. Further blend this with grated coconut and mix with buttermilk or curd. It is always better to use buttermilk rather than curd/yogurt. Because buttermilk is most healthier than curd.
While garlic is loaded with healthy nutrients. It’s low in calorie and low in saturated fat, cholesterol and sodium. It is an excellent source of vitamin B6 (pyridoxine). It is also a very good source of manganese, selenium and vitamin C. In addition garlic is a good source of other minerals like phosphorus, calcium, potassium, iron and copper. Most importantly, it is a healing herb which cures many health problems.

Here is the simple and healthy garlic tambuli along with its benefits. step by step photos and detailed video of garlic tambuli:
Heat a pan over low to medium flame and add ghee.
Once the ghee is melted, add cumin seeds, garlic cloves and dry red chilli.
Roast for 2 to 3 mins until cumin splutters and garlic slightly turns to gold color. Turn off the heat.
Now transfer this to a blender along with grated coconut.
Also add little water and make a fine paste.
Again pour the blended mixture to a bowl.
Similarly add buttermilk. You can also add curd instead of buttermilk.
Now add salt and give it a good mix. keep it aside.
Further for tempering, heat a pan and add ghee, mustard, cumin, hing and curry leaves.
Saute for a minute until it splutters. Now turn off the heat.
Transfer this tempering to garlic tambuli and give it a good mix.
Now the healthy garlic tambuli is ready to serve!!
This garlic tambuli goes well with hot steamed rice with a little ghee.
