It is a popular recipe of Karnataka, which is the common recipe during festive season like Navaratri. Especially this rich traditional sweet hayagriva is offer as a naivedhyam to deities. And also this is one of the sweet which is made in South India during Navaratri.
There is a mythology story behind this sweet Hayagreeva & how it got that name! In Hinduism, Lord Hayagriva is one of 10 avataras of Lord Vishnu, who is worshipped as the god with human body and a horse’s head, seated on a white lotus. A great devotee named Sri vadirajathirtha of Udupi sri krishna mutt used to offer cooked bengal gram with jaggery to Lord hayagreeva. So the sweet dish prepared using bengal gram & jaggery got the name as “hayagreeva” or “hayagreeva maddi”. In Kannada the mixture of cooked chana dal & jaggery, along with coconut & ghee is called maddi & hence the name Hayagriva maddi. Even today this hayagriva is offered as a “naivedhyam” to god everyday in Sode Vadiraja mutt Udupi & served as a prasadam.
In addition to this, Hayagriva sweet is very rich & tasty dish. Also so simple to make. Most importantly, while making hayagriva, don’t overcook chana dal. It should not be mushy, But looks like hold its shape. After cooking chana dal, drain off the water and slighly mash it & don’t mash it like a paste. It should be half mashed chana dal, but retains its shape. Then melt the jaggery with little water & then add mashed chana dal & stir continuously until thickens. After that add the other ingredients and mix well. Serve this hayagriva with a tsp of ghee to enhance its taste.
