Poha is a healthy & easy breakfast recipe which can be made in 15 mins. Basically this recipe is prepared from Aval/Poha. It is a tasty & healthy breakfast with few ingredients. Here red poha is used to make it more healthy. Also red poha is a healthy substitute for white poha. Most importantly, red poha contains antioxidant "anthocyanins" which imparts a red color. Moreover it's low in calories & gluten free. Thus helps in weight loss too.

- 1 cup red poha
- 1 tbsp coconut oil organic
- 1 tbsp peanuts
- ½ tsp mustard
- ½ tsp cumin
- ½ tsp hing (asafoetida)
- ½ tsp green chilli chopped
- 4 to 6 curry leaves
- ½ cup onion finely chopped
- ½ tsp salt
- ½ tsp palm jaggery optional
- 1 tbsp grated coconut
- 1 tsp lemon juice
- 1 tbsp coriander leaves finely chopped
Firstly, take a bowl and add red poha with little water
Wash it once and drain off water
Again add water to the poha and rest for 2 to 4 mins. Do not over soak
Next drain off the excess water from poha and keep it aside
In the mean time, heat a pan on moderate flame and add oil
When the oil gets heated, add peanuts and roast for 2 mins until they turns to brown
Take out the roasted peanuts to a bowl and keep aside
Now to the same pan, add mustard, cumin, chopped green chilli, hing and curry leaves
Saute it for 2 mins until they splutters
Further add finely chopped onion and saute well until they are translucent
Then add drained red poha, salt and jaggery
Mix everything well for 2 mins and lower the heat
Also add roasted peanuts and grated coconut
Give a good mix and turn off the heat
Finally add lemon juice & finely chopped coriander leaves
Now the healthy breakfast Poha is ready to serve!
