Here is a recipe of sweet potato halwa with unrefined sugar. Sweet potato halwa or shakarkandi ka halwa  is an instant yet delicious dessert. This purple sweet potato recipe is colorful and tasty recipe.

These kind of sweet potato has a beautiful purple color, also a natural & healthy substitute for food color. Purple sweet potato dessert is a simple, quick and very healthy dessert recipe. Basically you can make this halwa for any occasions, like for festivals or during vrat fasting.

Further when you have a sweet craving, definitely sweet potato halwa is one such healthy option you can make easily. The process of making this dessert is so simple, but the outcome is super delicious.

Even more, this is a refreshing dessert with refreshing spices like nutmeg, cardamom powder and crunchy fennel seeds. The spices gives a unique flavor & taste to this colorful delight. Here I have added fennel to enhance the taste of the dessert. And its optional. If you don’t want fennel, then skip it. But certainly it makes a refreshing dessert with an amazing taste.

Also you can make variations to this dessert to be more healthy & diabetic friendly. If so replace sugar with dates syrup or dates paste. Most important thing is, here I have used unrefined raw sugar rather than refined white sugar.

Usually we eat sweet potatoes, either by steaming it, or making dry sabzi. On the other hand, we use sweet potato for making snacks. But you can also make use of this healthy vegetable for preparing delicious desserts too, because of the sweet taste.

Moreover you can make this halwa in 2 ways. Either by using grated sweet potato or by using boiled mashed sweet potato. We prefer to use the boiled mashed potato. Because it consume less time & effort when compared with the grated sweet potato.

Purple sweet potato nutrition

Nutrition wise purple sweet potatoes are directly relative of the well- known orange sweet potatoes. The difference is in color and the presence of potent antioxidant “anthocyanin” which gives the flesh its purple color & shows anti-cancer properties.

The purple sweet potato or purple yam is a starchy root vegetable which is a great source of carbs, potassium and vitamin C. They also contains protein, fat, fiber, sodium, potassium, calcium, iron and vitamin A.

Sweet potato halwa is an instant, yet delicious dessert. It is a refreshing dessert with refreshing spices like nutmeg, fennel and cardamom powder. Sweet potato halwa tastes amazing & looks so vibrant. Most importantly, purple type sweet potatoes are packed with "anthocyanin" which imparts its own vibrant color. Ingredients

  • 2 purple sweet potatoes
  • 1 tbsp ghee
  • 2 tbsp raw sugar organic, unrefined
  • ½ cup milk skim
  • pinch nutmeg powder
  • ¼ tsp cardamom powder
  • ½ tsp fennel seeds
  • 1 tbsp almonds finely chopped

Instructions

  • Firstly remove the outer layer of sweet potato and cut the edges.
  • Next boil water in a pan and add the chopped purple sweet potatoes.
  • Cover the lid and cook this for 5 to 8 mins until sweet potatoes are boiled well.
  • Turn off the heat and transfer the boiled purple sweet potato to a bowl.
  • Mash the boiled sweet potatoes well and keep it aside.
  • Meanwhile heat a pan and add ghee.
  • As the ghee starts to melt, add the mashed sweet potato.
  • Give a good mix and then add raw sugar.
  • Mix well until sugar dissolves completely.
  • Lower the heat and add milk.
  • Again give a good mix so that milk combines well with sweet potato mixture.
  • Further add the refreshing spices like nutmeg powder, cardamom powder.
  • Give a good mix again.
  • Similarly add little fennel and give a final mix.
  • Turn off the heat and finally add chopped almond.
  • Now the refreshing delight purple sweet potato halwa is ready to enjoy!
