Certainly, this is very easy to make once the mung beans are sprouted well.

Undoubtedly, this simple & healthy salad is loaded with the goodness of mung beans or green gram sprouts, vibrant grated carrots, crunchy cucumbers, tangy lemon juice, selenium rich onions, healthy fat coconut, anti-inflammatory black pepper and lastly flavorful coriander leaves.

So we can have this sprouts salad as a breakfast or before meal, even as an appetizer with meal and also a dinner. Moreover you can make this sprouts salad in 2 ways. Firstly you can use raw sprouts to make the salad or else steam this mung sprouts and then add the fresh veggies.

Surely, sprouts salad helps in weight loss. As it contains good amount of fiber and keeps your stomach full, there by reducing over eating and promotes weight loss.

Finally for dressing I have added crushed black pepper, black salt and lemon juice. Black salt makes the salad tasty as well as gives nice aroma. Also lemon juice for tangy taste.

You can make any variations to this salad by adding your choices of vegetables and also spices. Hence this sprouts salad is vegan & gluten free.

Ingredients

  • 1 cup sprouted raw moong beans/green gram
  • 1/2 cup grated carrot
  • 1/2 cup cucumber finely chopped
  • 1/4 cup onion finely chopped
  • 1/2 cup grated coconut
  • 2 tbsp coriander leaves finely chopped

For dressing:

  • 1/2 tsp black salt
  • 1/2 tsp crushed black pepper
  • 1/2 tsp lemon juice

Instructions

How to make Sprouts moong beans or mung beans/green gram:

  • Firstly wash the mung beans and soak it in a hot or cold water for about 10 to 12 hrs.
  • Drain off the water and place it in a clean white cotton cloth or use muslin cloth. Make a knot and keep it in a bowl and cover it.
  • Now keep this in a warm dark place depending on the weather conditions.
  • The whole process takes 2 to 3 days to reach the desired 1/4 inch of sprouted mung beans.
  • Once the mung beans are sprouted well,you can make salad easily.

Method for making sprouts salad:

  • In a large mixing bowl add sprouted raw mung beans or green gram.
  • Also add grated carrot.
  • Now add the finely chopped crunchy cucumber.
  • Similarly add finely chopped onion and grated coconut.
  • Likewise add finely chopped coriander leaves.
  • Further for dressing add black salt, crushed black pepper and lemon juice.
  • finally give it a good mix.
  • Now the healthy, protein packed moong sprouts salad is ready to serve!
