Here is a Thai green curry recipe with easily available ingredients at home. Thai green curry veg recipe is a simple, quick recipe. It is a flavorful, delicious recipe with the blend of green coriander leaves, lemon grass and other Indian spices, along with rich , tasty coconut milk. Here the main ingredients are lemon grass, Thai basil, and coconut milk. This makes the curry aromatic and delicious.

In this green curry, the most important thing is the green paste and the coconut milk. These two enhances the taste of the curry.

Thai green curry recipe paste ingredients

  • lemon grass (fresh/dried)
  • coriander leaves
  • onion
  • ginger
  • garlic
  • green chilli
  • coriander seeds
  • pepper corns (black pepper)
  • cumin
  • lemon juice

If you get Thai basil, add it along with these ingredients. Blend all these ingredients with little water to a fine texture. This is the important thing in Thai green curry recipe.

Furthermore the vegetables I have added  are carrots, capsicum(green bell pepper), baby corn and broccoli florets. I have added these vegetables to match the color and also for getting amazing taste. You can add any veggies of your choice which is available at your place.

Even more, in most of the Thai based foods, they will use coconut milk as the main ingredient. It gives nice flavor, texture and makes the recipe rich with great taste. This is easy to make and hardly takes 20 to 30 minutes. This curry is used as a side dish  with hot rice. If you wish, you can also pair it with Indian roti, chapati.

Vegetarian Thai Green Curry is a simple, flavorful recipe. It is a delicious, tasty recipe. Here the main ingredient is lemon grass, and coconut milk. In most of the thai based foods, they will use coconut milk as the main ingredient. Easy to make and it hardly takes 20  to 30 mins. This Thai green curry goes well with hot rice.

Ingredients

  • 1 tbsp lemon grass (fresh/dried) chopped
  • 1/2 cup coriander leaves roughly chopped
  • 1/2 onion diced
  • 1 inch ginger
  • 2 cloves garlic chopped
  • 2 green chilli
  • 1 tsp coriander seeds
  • 4 to 6 pepper corns
  • 1 tsp cumin
  • 1 tsp lemon juice
  • 1 tbsp coconut oil
  • 1/2 cup carrot diced
  • 1/2 cup capsicum/green bell pepper diced
  • 1/2 cup baby corn diced
  • 1/2 cup broccoli florets
  • 1 tsp salt
  • 1/2 tsp sugar
  • 3/4 cup fresh coconut milk
  • 1 tsp lemon zest/lemon rind

How To Make Vegetarian Thai Green Curry:

  • Firstly, take a blender or mixie jar and add dried lemon gress, coriander leaves, diced onions and ginger.
  • Then add chopped garlic, slit green chilli and coriander seeds.
  • Also add black pepper, cumin and lemon juice.
  • Add little water and make a fine paste. Now the green paste is ready. Keep it aside.
  • Meanwhile, heat a pan on moderate flame and add coconut oil.
  • Once the oil is hot enough, add the blended green paste.
  • Stir well for 3 to 5 minutes and then add all the diced veggies like carrot, capsicum(green bell pepper), baby corn and broccoli florets.
  • Mix all the veggies, so that it combines well with the green paste.
  • Add little water and salt as per taste. Bring to boil for 4 to 5 minutes. Add water if needed while boiling.
  • Once all the veggies are cooked well, add fresh coconut milk.
  • Give it a good mix and add little sugar. Simmer for 2 to 3 minutes and turn off the heat.
  • Using a grater, add lemon zest (lemon rind). Finally give a quick mix. 
  • Now the delicious, tasty vegetarian Thai green curry is ready to serve!
  • Enjoy this green curry with hot rice.
