Banana flower poriyal or Banana blossoms stir fry is a healthy & nutritious recipe. Basically it is prepared from banana blossoms which is tossed in a tadka with onion & freshly grated coconut. Most importantly, Banana flower is a super food for overall health of a women. It also manages diabetes and prevents anemia. They are loaded with fiber, vitamins, minerals, potassium. - 1 Banana flower
- 2 cup water
- 2 tbsp butter milk or curd
- 1 tsp salt
- ½ tsp turmeric powder
- 2 tbsp coconut oil
- ½ tsp mustard
- ½ tsp cumin
- ½ tsp urad dal
- ½ tsp chana dal
- ½ tsp hing
- green chilli as per spice level
- 4 to 6 curry leaves
- ½ cup onion finely chopped
- 1 tsp jaggery
- ½ tsp monkey jack powder/Artocarpus lacucha/Vate huli powder
- ½ cup grated coconut
How To Clean & Cut Banana Flower:
Firstly, apply little oil to your palm before cleaning banana flower. Because while cleaning banana flower it turns your palm black & also it is stick to your palm. So to avoid the staining always rub your palm with oil & then clean the banana flower
Then open the large petals of banana flower one by one and under each leaf there will be a bunch of yellow florets (if the banana flower is matured one, then the florets are in brown color)
Remove these kind of florets and keep them separately in a plate
keep peeling florets until you reach the white yellow flower heart.
Now take one floret and remove the two parts that need to be discarded
One Part is the long sticky structure with a bulb like top called Stem. And the bulb like stem with its top is in black color, is the sticky stigma. That is to be discarded. So remove this stigma from all the florets
The second part is the perianth or tepal. These looks like translucent paper like cover. Remove this part also from all the florets
Remove those two parts from all the florets. Otherwise the banana flower will be bitter while making dish
After removing the discarded parts from all the florets, chop them finely
Take a wide bowl and add water & butter milk or curd. Now add the chopped banana florets to bowl
This is to avoid the discoloration of banana florets. Then drain off the water from florets and boil it for further usage
How To Make Banana Flower Poriyal:
Heat a pan and add water
Then add banana florets soaked in the butter milk mixture
Again add salt & turmeric powder and bring this to a boil until the banana florets cooked well
Once they are cooked well, Strain them and take out to a plate and keep it aside
Meanwhile prepare the tempering for poriyal
For that heat another pan and add coconut oil
As the oil gets heated, add mustard, cumin, urad dal, chana dal, hing, green chilli
Saute them until splutters & dals turns to golden brown color
Further add curry leaves and saute it again
Next add finely chopped onion and saute it until they are translucent
Now add the boiled banana flower and give a good mix
Also add salt, jaggery and monkey jack powder(vate huli powder)
Mix everything well and stir for a minute & turn off the heat
Finally add grated coconut
Now the nutritious & super food Banana flower poriayal is ready to serve!
