Usually vegetable pancakes recipe is a made with refined flour, but this recipe is a healthy variation without refined flour and eggs. Vegetable pancake is an instant & healthy breakfast recipe. Basically it is loaded with different kind of vegetables along with oats & barley flour. It is a nutritious recipe with the goodness of all the essential nutrients like fiber, vitamins and minerals etc. You can add your choice of veggies & whatever you have at home. Here I have taken broccoli, onion, 2 types of cabbage, carrot and spring onion. These veggies looks vibrant and even tasty too.

Further this Vegetable pancakes recipe is a kid friendly. You can make it for kids lunch box & also serve this as a side dish for lunch or dinner. More over it is very difficult to feed vegetables to kids. This is one of the best way of including veggies in kids diet. It is not only for kids, but all age groups enjoy this vegetable pancake recipe. Usually all purpose flour  & baking soda are used while preparing pancakes. But this is completely health version of vegetable pancake without baking soda. Rather than all purpose flour (maida), here oats & barley flour is used.

In addition to this, oats & barley are the ancient & healthy grains with high amount of fiber and contains all the nutrition profile. Thus it helps in managing blood sugar level & also good for weight loss. As oats & barley helps in weight loss. Vegetable pancake made in this way is a healthy choice for those who has diabetes. Vegetable pancake is a instant & healthy breakfast recipe. Basically it is loaded with different kind of vegetables with oats & barley flour. Oats & barley are gluten free grains with high fiber content & thus helps in reducing blood sugar level. Most importantly, this vegetable pancake is kids friendly recipe & is the best way to include vegetables in kids diet. So simple to make, but very nutritious & even tasty too.

Ingredients

  • ½ cup broccoli florets
  • ½ cup onion thinly sliced
  • ½ cup white cabbage thinly sliced
  • ½ cup purple cabbage thinly sliced
  • ½ cup carrot thinly sliced
  • ½ cup spring onion roughly chopped
  • ½ cup oats flour
  • ½ cup barley flour
  • ½ tsp salt
  • 1 tsp ajwain
  • ¼ tsp crushed pepper

Instructions

  • To begin with vegetable pancake, firstly we need to chop vegetables of your choice & keep it aside
  • Next take a wide bowl and add the chopped vegetables one by one
  • Then add oats flour and barley flour
  • Further add salt, ajwain and crushed pepper
  • Mix everything well before adding water
  • Now add little water at a time and mix all ingredients, so that the batter of the pancake should not be too thin nor too thick
  • Once the batter is ready keep it aside
  • In the mean time, heat a tawa on moderate flame & apply very little oil
  • Once the tawa is hot enough, pour a ladle full of batter on the tawa & spread evenly
  • Again add little oil on the vegetable pancake & cover the lid
  • Cook for 2 to 3 mins & then carefully open the lid
  • The base of the pancake is cooked well. Now flip over the pancake and cook the other side
  • Again flip it and cook for one more minute
  • Take out to a plate and turn off the heat
  • Now the healthy & tasty vegetable pancake is ready to serve!
  • Enjoy this with chutney or tomato ketchup!
