This is a homemade, completely clean version of chipotle veggie burrito bowl. Here we see how to make veggie burrito bowl recipe in a easy way. These veggie burrito bowl is very healthy and nutritious. Most importantly, veggie burrito bowl recipe is loaded with healthy, crunchy veggies, pinto beans, cilantro-lime rice, salsa and tasty guacamole. If you wish add vegan sour cream and vegan cheese. Although the ingredients for vegan burrito bowl looks so big, certainly the process of making is easy and tastes delicious.
Moreover they are loaded with protein and fiber to give you a healthy nutrients. And protein and fiber helps to keep you full for hours. This is also packed with healthy veggies to give you a full meal packed with vitamins and minerals.
Firstly we start with a base of rice. You can use white rice or brown rice, that’s your choice. Here I have used low G.I brown rice. Also instead of rice, you can use quinoa, as well as cauliflower rice too. Once the rice is cooked, mix in a handful of chopped cilantro or coriander leaves, a squeeze of lemon juice, along with grated lemon zest. Lemon zest gives a nice flavor and amazing taste to the rice.
Second thing in veggie burrito bowl is the pinto or black bean mixture. For this you need cooked pinto or black beans. Here I have used pinto beans. Mainly chipotle simmers their beans with onion, garlic, and chilli powder. Basically sauté the chopped onion in little oil, then add cooked pinto beans with other ingredients like, onion powder, garlic salt and chilli powder. Mix everything well and add little water. Next using a masher smash the pinto beans to softness.
Next is a mix of fajita veggies. This means grilled bell peppers with red onion, sautéed in a light oil with chilli powder, salt and lemon juice. Stir fry the veggies until they are soft. These crunchy veggies are healthy and even tasty too. Also these veggies looks so colorful, because of the red, green yellow and orange bell peppers.
Furthermore, the next layer in the burrito bowl is salsa. Make your own type of salsa. Here I have prepared corn and tomato salsa. For that just mix the corn and tomatoes separately with chopped red onions, jalapenos, cilantro, salt and lemon juice.
Even more the next layer is the guacamole. This is very easy to prepare and very tasty dip. For the detailed preparation of guacamole, please check our recipe for How to make Guacamole. Finally sprinkle some vegan cheese and a dollop of vegan sour cream. Serve all these in a bowl and enjoy the veggie burrito bowl.

Here is the power packed, healthy and nutritious veggie burrito bowl with step by step photos and a detailed video.
Firstly, heat a pan on moderate flame and add extra virgin olive oil.
Once the oil is hot enough, add cumin and chopped onion.
Saute well for a minute or two. Then add boiled pinto beans.
Give it a good mix and add red chilli powder, onion powder, garlic salt.
Again give it a good mix and add little water.
Cook for 2 minutes and then smash it using a masher. Turn off the heat.
Now the pinto bean mixture is ready. Keep it aside.
Heat a pan and add olive oil. Once the oil is heated up, add thinly sliced onion.
Saute well for 2 mins until onions are translucent.
Next add colored bell peppers like red, yellow, orange and green.
Then add salt and give it a good mix.
Similarly add broccoli florets and mix it again.
Likewise add lemon juice and paprika or red chilli powder.
Mix everything well and cook for 2 mins. Turn off the heat.
Now the fajita veggie mix or crunchy veggies is ready. Keep it aside.
Meanwhile we prepare the salsa for veggie burrito bowl.
Take a small bowl and add finely chopped tomatoes, onion, cilantro/coriander leaves, jalapenos and salt.
Mix everything well and keep it aside.
Now the tomato salsa is ready.
Take another bowl and add boiled sweet corn.
Next add finely chopped onion, cilantro, jalapenos and salt.
Mix all the ingredients well.
Now the sweet corn salsa is ready and keep it aside.
Heat a pan on moderate flame and add oil.
Next add finely chopped garlic, onion and jalapenos.
Saute well for 2 to 3 mins. Then add cooked brown rice and mix very well.
Also add grated lemon zest and lemon juice. Mix it again.
Similarly add salt and give a quick mix.
Finally add chopped cilantro and mix all together. Turn off the heat.
Now the cilantro-lime rice is ready.
Take a large wide bowl and first add little cilantro-lime rice.
Next add prepared pinto bean mixture and fajita veggie mix. Then add a tbsp of prepared tomato and corn salsa on top of rice.

Finally sprinkle a little vegan cheese and add vegan sour cream too.
