First of all, heat a pan on moderate flame and add unsalted butter.
Once the butter melted up, add garlic cloves and ginger. Saute well for 2 to 3 mins until the raw smell is gone.
Then add chopped red onion and fry for 4 to 5 mins. Add little salt and again fry it for a minute.
Next add chopped carrot and stir it for a minute. Add 1 cup of water and mix every thing well.
Bring it a boil for 3 to 4 mins and turn off the heat. Allow to cool this completely and then transfer this to a blender.
Now blend this mixture to a smooth paste.
Again heat a pan and add the blended mixture. Give it a good mix and bring it a boil for 2 mins.
Also add milk and aromatic seasoning herbs like basil, oregano and thyme.
Similarly add sugar and salt.
Gently mix everything and again boil for 2 mins.
Finally add pepper & cheese and mix it well. Turn off the heat.
Now the delicious, creamy, rich carrot ginger soup is ready to serve!
