Firstly heat a pan on moderate flame and add water and little salt.
Then add chopped raw mango cubes and cover the lid.
Bring this to a boil for 2 to 3 mins and turn off the heat.
Now strain the boiled mango cubes and keep the water for further use.
Transfer the boiled mango cubes to a blender.
Additionally add cumin and green chilli.
Now blend this mixture to a fine paste and keep it aside.
Meanwhile heat another pan and add the blended paste.
Further add the remaining water used for boiling mango( stock).
Next add water additionally if needed.
Give a good mix and bring this to a boil for 2 to 3 mins.
Similarly add salt and jaggery.
Give a good mix and again boil for one more minute.
Turn off the heat and finally add chopped coriander leaves. Keep this aside.
Now take a tempering pan and add ghee.
Once the ghee is melts, add mustard, cumin, hing and curry leaves.
Saute well until splutters and turn off the heat.
Add this tempering to the prepared mango rasam and mix well.
Now the tasty Raw Mango Rasam is ready to serve!
Enjoy this rasam with hot plain rice with a spoonful of ghee or as a soup for drinking.
