Firstly remove the outer layer of sweet potato and cut the edges.
Next boil water in a pan and add the chopped purple sweet potatoes.
Cover the lid and cook this for 5 to 8 mins until sweet potatoes are boiled well.
Turn off the heat and transfer the boiled purple sweet potato to a bowl.
Mash the boiled sweet potatoes well and keep it aside.
Meanwhile heat a pan and add ghee.
As the ghee starts to melt, add the mashed sweet potato.
Give a good mix and then add raw sugar.
Mix well until sugar dissolves completely.
Lower the heat and add milk.
Again give a good mix so that milk combines well with sweet potato mixture.
Further add the refreshing spices like nutmeg powder, cardamom powder.
Give a good mix again.
Similarly add little fennel and give a final mix.
Turn off the heat and finally add chopped almond.
Now the refreshing delight purple sweet potato halwa is ready to enjoy!
