Here is a keto snack Zucchini chips baked with dipping sauce. Zucchini chips recipe is a quick & easy healthy snack recipe. It is a crisp & tasty snack recipe with very few ingredients. Basically zucchini is a summer squash, which is similar to cucumbers. It is a low calorie vegetable with all the essential nutrients. Most importantly, this zucchini chips is gluten free & non fried healthy snack. One of the good evening snack recipe, which is tasty and also helps in weight loss. Moreover it is a good diabetic snack.

Furthermore, in this recipe I have used oats crumbs for coating zucchini slices rather than bread crumbs. Oats crumbs is the healthier alternative to bread crumbs and also gluten free. If you wish you could make variations to this recipe, by placing cheese over the coated zucchini slices. But here I have not used cheese. These zucchini chips are so light and crispy, just like potato chips. But most healthy when compared with potato chips. If you prefer the chips to be more spicy, then add little more paprika or red chilli powder to the zucchini slices before coating them in oats mixture. Enjoy this chips with flavorful mint yogurt dip or any kind of dip.

In addition to this Zucchini contains a variety of vitamins & minerals. It is rich in antioxidants, which help to protect our body from damage by free radicals. It is good for skin, eyes and heart. Mainly zucchini promotes a healthy digestion & reduces blood sugar levels

Ingredients

  • 1 zucchini organic
  • ½ tsp salt
  • ½ tsp pepper crushed
  • ½ tsp olive oil extra virgin
  • ½ cup oats crushed
  • ½ tsp red chilli powder

Instructions

  • Firstly, slice the zucchini and transfer to a wide bowl
  • Then add little salt and crushed pepper
  • Next add very little olive oil and give a good mix. Keep it aside
  • Further take crushed oats in a plate
  • Now to the crushed oats, add salt and red chilli powder & mix well
  • Take one slice of zucchini and dip it in oats mixture so that both sides of zucchini coats well
  • Similarly do the same way for other zucchini slices
  • Now take a baking tray with baking sheet and arrange these coated zucchini slices one by one
  • Bake this at 180 degree centigrade for 15 to 20 mins and carefully take out from oven
  • Now the healthy, crisp, non fried Zucchini chips is ready to serve!
  • Enjoy this chips with mint yogurt dip or any kind of dip
