Ingredients
- 1/2 cup beetroot diced & boiled
- 1/2 cup carrots diced & boiled
- 1/2 cup potatoes chopped & boiled
- 1/2 cup tomatoes chopped
- 2 to 3 strands coriander leaves
- 2 cups vegetable stock
- 1 tbsp butter
- 1 tsp cumin powder
- 1 tsp fennel powder
- 1/2 tsp salt
- 1/4 tsp sugar
- 1 tsp thick yogurt for garnish
Instructions
Preparation for making Beet soup:
- Firstly peel the outer skin of beets, carrots and potato and dice them. Also chop small size tomato.
- Cook slightly the vegetables like beets, carrots and potato separately and do not waste the boiled water or vegetable stock. This can be further used instead of water.
Method for making Beetroot soup:
- In a blender or food processor add boiled beetroot, carrot and potatoes.
- Add chopped tomatoes and 2 to 3 strands of coriander leaves. Also add little water or vegetable stock if required.
- Blend to a fine paste and keep it aside.
- Now heat a pan on low to medium flame and add small slice of butter (around 1 tbsp) and this is optional.
- Once the butter melts, add blended vegetables paste.
- Give a good mix.
- Check the consistency of the soup and add water or vegetable stock.
- Again mix it well and bring to a boil on low flame for 3 to 4 mins.
- Furthermore add cumin powder and fennel powder.
- Similarly add salt and sugar.
- Mix well properly and simmer for 2 to 3 mins.
- Turn off the heat and add crushed pepper and sprinkle chopped coriander leaves.
- Finally give it a good mix.
- Now the healthy beetroot soup is ready. Serve the soup hot or cold and enjoy the healthy soup.
