Further Beetroot soup is made from beetroot, carrot and potatoes. Beetroot & carrot soup is a simple, healthy recipe, good option for dinner as well as evening snack.  Basically, this soup recipe combines beetroot and carrots to create a beautiful crimson soup that also rich in health promoting nutrients. Also, this beetroot soup came out in a delicious color because of the compound betanin.

Most importantly, this soup helps in weight loss because it is low in calories and rich in fiber. Further I have added boiled potatoes and tomatoes while blending. So potatoes gives a good texture and certainly tomatoes makes the soup little tangy. Also beetroot are high in sugar content. Hence it is sweet and sour soup. More over the cumin and fennel powder  gives a nice aroma to the soup and also these helps in digestion. Finally I have used thick yogurt and cilantro or coriander leaves for garnish

Beetroot and carrots are the root vegetables mainly known for its beta-carotene and fiber content. It is also a source of antioxidant agent. carrots are rich in vitamin A, vitamin C, vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper and manganese.

While the beetroot are low in calories and almost fat free.  Beets are a great source of folate. Most importantly, they have a valuable nutrients and has a vibrant color because of the presence of compound betanin. Beetroot contains other minerals like iron, magnesium, manganese, sodium, zinc, copper and selenium.

Beetroot Soup is a healthy weight loss recipe. It is so simple to make. This beet soup came out in a delicious colour and also tastes great as well.

Ingredients

  • 1/2 cup beetroot diced & boiled
  • 1/2 cup carrots diced & boiled
  • 1/2 cup potatoes chopped & boiled
  • 1/2 cup tomatoes chopped
  • 2 to 3 strands coriander leaves
  • 2 cups vegetable stock
  • 1 tbsp butter
  • 1 tsp cumin powder
  • 1 tsp fennel powder
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 1 tsp thick yogurt for garnish

Instructions

Preparation for making Beet soup:

  • Firstly peel the outer skin of beets, carrots and potato and dice them. Also chop small size tomato.
  • Cook slightly the vegetables like beets, carrots and potato separately and do not waste the boiled water or vegetable stock. This can be further used instead of water.

Method for making Beetroot soup:

  • In a blender or food processor add boiled beetroot, carrot and potatoes.
  •  Add chopped tomatoes and 2 to 3 strands of coriander leaves. Also add little water or vegetable stock if required.
  • Blend to a fine paste and keep it aside. 
  • Now heat a pan on low to medium flame and add small slice of butter (around 1 tbsp) and this is optional.
  • Once the butter melts, add blended vegetables paste.
  • Give a good mix.
  • Check the consistency of the soup and add water or vegetable stock.
  • Again mix it well and bring to a boil on low flame for 3 to 4 mins.
  • Furthermore add cumin powder and fennel powder.
  • Similarly add salt and sugar.
  • Mix well properly and simmer for 2 to 3 mins.
  • Turn off the heat and add crushed pepper and sprinkle chopped coriander leaves.
  • Finally give it a good mix.
  • Now the healthy beetroot soup is ready. Serve the soup hot or cold and enjoy the healthy soup.
