Here is a nutritious recipe with palak, using coconut and pre-biotic curd, that is Palak tambuli. Palak recipes as tambuli is a healthy, cooling curd based recipe. It is simple, quick recipe and can takes 10 to 15 mins to prepare.
Basically tambuli is a riata type recipe. First of all, in Kannada ‘tambuli ‘ means ‘tampada huli’. This tambli is a part of every day meal in Karnataka, especially in Malnad, Udupi and Mangalore regions. This palak tambuli is not only tasty, but also healthy with essential nutrients & also with the goodness of spinach, coconut, yogurt and ayurvedic herbs.
Firstly sauté the roughly chopped spinach in ghee. Also add little hing/asafoetida while frying. This is because, green leaves releases gas while sautéing. So to avoid this gas, add hing while sautéing any green leaves. Then grind this cooked spinach with grated coconut, cumin and black pepper. Also mix this blended paste with buttermilk or curd. Most importantly, buttermilk is always healthiest one rather than curd. finally give a coconut oil tempering. certainly you can use any oil for tempering, but coconut oil gives the nice flavor and excellent taste to the recipe.
More over spinach is one of the most nutritious food on the earth. Because this leafy vegetable is rich in water-soluble vitamins, fat-soluble vitamins, minerals, and a wide variety of phytonutrients. So include spinach/Palak into your meal plan and enjoy a variety of nutritional benefits. Recent studies shows that sautéing spinach is best able to retain its total carotenoid rather than steaming, boiling or frying.
Furthermore in this spinach tambuli, I have not boiled, steamed the spinach. Instead just sauté the spinach. Hence this is one of the healthiest recipe with palak to include in our diet.

Here is the healthy Palak tambuli with Step by Step instructions & Video:
Firstly heat a pan on moderate flame and add ghee. Once the ghee is melted up add chopped palak/spinach.
Saute well for 2 to 3 mins. Then add little hing. This is because, while frying green leaf, it releases gas. So to avoid gas, here i have added hing.
Again Saute it for a minute until palak shrinks in size. Then turn off the heat and allow to cool this completely.
Next transfer this cooked palak to a blender and add grated coconut, cumin and black pepper.
Add little water and blend to a fine paste.
Then transfer this blended mixture to a bowl. Similarly add buttermilk or curd.
Likewise add salt. Give it a good mix and keep it aside. Meanwhile we prepare tempering for tambuli.
Heat a tempering pan and add coconut oil. Once the oil is hot enough, add mustard, cumin, hing and curry leaves.
Saute well until it splutters. Turn off the heat and add prepared tempering to palak tambuli. Mix it well.
Now the healthy, nutritious palak/spinach tambuli is ready.
Serve this tambuli with hot rice with a spoonful of ghee.
