In a blender or food processor add boiled beetroot, carrot and potatoes.
Add chopped tomatoes and 2 to 3 strands of coriander leaves. Also add little water or vegetable stock if required.
Blend to a fine paste and keep it aside.
Now heat a pan on low to medium flame and add small slice of butter (around 1 tbsp) and this is optional.
Once the butter melts, add blended vegetables paste.
Give a good mix.
Check the consistency of the soup and add water or vegetable stock.
Again mix it well and bring to a boil on low flame for 3 to 4 mins.
Furthermore add cumin powder and fennel powder.
Similarly add salt and sugar.
Mix well properly and simmer for 2 to 3 mins.
Turn off the heat and add crushed pepper and sprinkle chopped coriander leaves.
Finally give it a good mix.
Now the healthy beetroot soup is ready. Serve the soup hot or cold and enjoy the healthy soup.
