Firstly, in a pressure cooker add washed chana dal and water. Cover the cooker lid and pressure cook for 5 to 6 whistles
Then drain off the water from chana dal and transfer the cooked chana dal to a bowl
Slightly mash the cooked chana dal. Don't over mash like a paste & it should be half cooked
Take a pan or wok and add ghee
As the ghee starts to melt, add chopped cashews and almonds
Roast it for 2 mins and then add raisins
Further roast everything for a minute and take out the roasted dry fruits to a small bowl
Again to the pan, add 1 cup jaggery and 1/4 cup water
Stir this for 2 mins until jaggery completely melts
Then add cooked chana dal and give a good mix
Stir this mixture continuously until it thickens
Next add 1 tbsp of ghee and again give a good mix
Now lower the heat, and add cardamom powder & roasted dry fruits
Mix everything well
Finally add grated dry coconut and give a final mix
Now the delicious Prasadam Hayagreeva is ready to serve!
