Stuffed capsicum | Stuffed capsicum with paneer | Stuffed Bell Peppers

This is a healthy recipe from Bell Pepper, Oats & Paneer. First make stuffing of oats then bake them inside a bell pepper covered by paneer.

Ingredients

Stuffing

  • 1 tbsp Oil
  • 1 tsp Ginger minced
  • 1 tsp Garlic minced
  • 1 tbsp Onion finely chopped
  • ½ cup Carrot chopped
  • ¼ cup Sweet potato chopped
  • 2 tbsp Sweet corn boiled
  • 2 tsp Salt
  • 1 cup Oats
  • ½ tsp Cumin powder
  • ½ tsp Red chilli powder
  • ½ tsp Coriander Powder

Stuffed Bell Pepper preparation

  • 3 Bell Pepper sliced in half
  • ½ cup paneer (indian cottage cheese)

Instructions

Prepare Stuffing

  • Add oil to a heating pan
  • Add garlic & ginger
  • Sauté well for 2 mins till garlic are brown & aromatic
  • Add Onion and sauté well for 2 mins till it gets cooked
  • Now add vegetables like carrots, sweet potatoes & cooked sweet corn. Use any of your preferred vegetables (Potato, Broccoli, Beans, etc.)
  • Saute well for 2 mins
  • Add salt and little bit of water
  • Cover the lid and cook for 5 mins
  • Now add Oats
  • Add ½ cup of water and cook for 3 to 5 mins
  • Add cumin, red chilli & coriander powders and mix well
  • Add salt as per taste
  • Mix well & Cover the lid, cook for 2 to 3 mins. Keep aside

Stuffed Bell Pepper preparation

  • Arrange the half sliced colored bell peppers on a baking tray
  • Fill the bell pepper with 2 tbsp of stuffing
  • Spread grated paneer on top of stuffed bell peppers & press it
  • Spray cooking oil on top of paneer. This is optional
  • This goes to the oven pre-heated at 180°C or 355°F for 20 to 25 mins till the paneer is golden brown
  • Garnish with coriander leaves
