Sweet corn soup recipe is a simple, quick, easy and healthy  soup made with fresh ingredients. It's a gluten-free , dairy-free recipe. It's so much easier and just as tasty!

Ingredients

  • 1 cup fresh corn kernels
  • 1/2 cup carrots chopped
  • 1/2 cup beans chopped
  • 1 tbsp corn flour
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp pepper crushed
  • 2.5 cups water
  • 1 tsp coriander leaves chopped

Instructions

To prepare corn paste:

  • Take a blender and add 1/2 cup of fresh corn kernels and little water
  • Make a fine paste

To prepare corn flour paste:

  • In a mixing bowl add corn flour and little water
  • Make a fine paste , no lumps

Method for preparation of corn soup:

  • In a heating pat add 2 1/2 cups of water
  • Add finely chopped carrots
  • Bring to a boil for 3 to 4 mins
  • Also add finely chopped beans
  • Bring to boil for 2 mins 
  • Now add fresh corn kernels
  • Mix well and boil for another 2 mins until all the vegetables are soft
  • Now add the blended sweet corn mixture to boiling vegetables
  • Mix well and bring to a boil for 2 to 3 mins
  • Now add salt
  • Add sugar
  • Cook for 2 mins
  • Also add corn flour paste 
  • Stir well until the soup gets thicken
  • Finely add crushed pepper and sprinkle coriander leaves
  • Now the sweet corn soup is ready to serve!
