Firstly heat a pan on medium flame and add organic, unrefined coconut oil.
Once the oil is hot enough, add mustard, cumin, urad dal, chana dal and a pinch of turmeric powder.
Saute well until it splutters and the dals get golden color.
Next add green chilli as per spice level.
Also add hing (asafoetida) and curry leaves.
Again saute for a minute.
Now add finely chopped cabbage.
Mix everything well and stir fry for 2 mins.
Then add salt and again give a good mix.
Further sprinkle a little water over the cabbage mixture and mix very well.
Cover the lid and cook for 4 to 5 mins on medium heat until the cabbage cooks well.
Now remove the lid and mix it again. Then add sugar (optional) and further mix it once.
Likewise add grated coconut and finely chopped coriander leaves.
Turn off the heat and finally squeeze a little lemon juice.
Give a good mix once.
Now the tasty cabbage poriyal or cabbage palya is ready to serve.
Enjoy this cabbage poriyal as a side dish with chapati, poori, roti or dosa. Also goes well with plain rice.
